Back when I was in Bali, I visited a Greek cafe twice and had their Greek salad. This avocado tomato salad is my own adaptation of theirs, except I added avocado and removed the onions and olives from it.
Ingredients needed for the avocado and tomato salad (serving for 2)
1.5 cups of cherry tomatoes or tomatoes on the vines
1/2 Lebanese cucumber
Feta cheese (as preferred)
1 tbsp of olive oil
Step 1: Dice tomatoes, cucumber, avocado and feta cheese.
Step 2: Add in lemon juice and olive oil, mix well. Be gentle or it’ll mash up the avocado and feta cheese.
I usually slice up the avocado last as they oxidize really quickly, and the lemon juice should be stirred in as quickly as possible.
Pair the avocado salad with our lemon brown rice to create a complete meal.
